  • Dried red kidney beans have to be boiled properly, not just warmed through. Soak them, drain, then boil hard for at least ten minutes before dropping to a simmer — undercooked kidney beans contain a lectin that makes people quite ill for a few hours. A slow cooker left on its low setting is the classic way people get caught out.
  • Canned kidney beans are already fully cooked, so the hard-boil rule doesn't apply to them at all. Draining and rinsing washes off a good share of the sodium and some of the gas-forming sugars sitting in the packing liquid.
